5 Ways To Stretch A Roast

Last night I made a crock-pot roast and, as usual, ended up with leftovers. To keep things interesting, I like to make a "new" meal using the leftovers, rather than eating the same thing twice. Here are five different ways to enjoy a roast you cook once. 

The first meal is the one I usually start with. Depending on the size of the roast, we can sometimes enjoy it up to three different ways. 


  • Meal #1: Roast with potatoes, carrots, gravy

Add a roast , potatoes, carrots, onion, spices, and seasonings to the crock-pot first thing in the morning. Cook on low all day for a tasty, tender meal by dinner.


  • Meal #2: Shepherd's Pie

Saute celery and onion in butter, add leftover roast (cubed) and juices. Pour into the bottom of a casserole dish. Layer up with green beans, mashed potatoes, a can of mushroom soup, shredded cheddar, and a sprinkling or paprika. Bake at 350 for 30 minutes.


  • Meal #3: Roast Beef on Bread with Gravy

Cut leftover crock-pot roast into thick slices. Strain the leftover juices and thicken with cornstarch to make a gravy. Add meat to a slice of crusty bread and generously cover with gravy. (Brad's favorite!)


  • Meal #4: Tacos

Shred left-over roast and season with Taco Seasoning. Layer meat in a taco shell with shredded lettuce, cheese, chopped tomato, onion, and a dollop of sour cream.


  • Meal #5: Soup

Dice up leftover meat and add to a large stock pot. Add a can of tomato juice, finely chopped carrots, celery, onion, leeks, bay leaves, and spices. Simmer all day and serve with bread, cheese, and crackers.

  2. I also made a roast last night. Today we will have beef stroganoff, and tomorrow mexican beef stew. If there are any left overs, I plan to grind it with leftover pulled pork a meatloaf. I love making roasts as most of my cooking is done the first day, and then I have a few days of do-overs.

  4. Another idea is to make beef pot pie with the leftovers....yummy! Make a sauce with butter, flour, beef stock; add in shredded beef and whatever veggies you like; put in a pie crust.

  5. BBQ! I don't know if you can do it after you use it for other things but our favorite thing to do with a roast (and hubby takes leftovers to work) is to slow cook it all day with a little BBQ sauce, add some more during the last 30 minutes then shred it up to make shredded beef (or pork) sandwiches! Yum yum yum. My mouth is watering just thinking about it. We did this for after our youngest's baptism and you will be amazed at how many people one small roast can feed!

  6. Yum! My mom always used kitchen shears to cut up the leftover meat into small bites or shreds. Then mix in mayo (or miracle whip) and mustard. Now it's ready to slap on some bread for a sandwich! Kids like it alone, adults like to add lettuce. :-)

  7. I do most of the above things as well! Another great addition is doing a big beef pot pie. I make mine in a 9X13 pan. Use whatever veggies you want, add the meat, make up a good sauce (no real recipe, last time I did it, I just kind of threw stuff together!) make a double crust recipe (or buy a crust!) and you're done! Yum!

  8. I usually make a pot pie but with a pastry shell and I usually add a box of stovetop stuffing, soaks up all the juice, so flavorful.
    *pie shell top and bottom (or mashed potato top)
    *left over roast(chopped) and gravy
    *carrots/peas/corn/and(or)chopped potatoes
    *stuffing

    simple, but very good.

  9. Yum - these are great ideas! I often put leftover roast in soups or in pasta sauces. It's also good cut up with potatoes and onions to make roast beef hash.

  10. You're post is making me hungry! My hubby makes a mean shepherd's pie with the leftover roast, or I will make a batch of homemade BBQ sauce for sandwiches. Sometimes I'll fix beef stew or just add meat to a spaghetti sauce.

  11. We like to make BBQ Shredded Beef Casserole - shred the meat, mix it with BBQ sauce (homemade) & top with biscuits. Make your favorite biscuit recipe and then just drop little piles of the dough on top until covered. Bake for 20-30 min. or until the biscuits are done - Yum!!

    The other night I experimented turning leftovers into beef pot pie. Especially since I already had potatoes and carrots, it went together so quickly.

  13. We like to make Italian Beef Sandwiches. I cook the roast initially with italian seasoning mix and then the next day, reheat and shred it. We put it on buns with a little mozzarella cheese over the top :) I pinned your post so I can refer back to it later--thank you!

    Another idea: turn it into beef pot pie. Especially if there's extra potatoes and carrots, it would go together quickly!

  20. Our favorite way to eat leftover roast is to cut the meat up into bite size chunks, and place into pot with any of the leftover potatoes, carrots, and the gravy. Add water to thin out gravy (depending on how much gravy you have left, you may want to add a little beef boullion for additional flavor), heat to boiling, add elbow macaroni, and simmer until macaroni is done, stirring occasionally. My dear mama-in-law taught me this way to stretch a roast. She also taught me that when company is at the house unexpectedly at a mealtime, cook some macaroni, drain, and scramble in a skillet with eggs and butter. This is a good "fill in the cracks" sidedish!
